Ein Kerem, Israel: The Picture Perfect Town of Judea

Nestled in the highlands of Jerusalem, between Mount Ors and Mount Herzl, is the small but iconic and ancient town of Ein Kerem. It holds a substantial place in Jewish history and is known today as a place of artistic prominence and practice. Beauty seems to be the ideal keyword for describing Ein Kerem and even the drive to the town is breathtaking, and built to accommodate the land. The roads move and curve with the mountainside, giving the entire area a very old world feel and appearance.

The History of Ein Kerem

The historic town of Ein Kerem has roots in the Old Testament mentioned in the books of Jeremiah and Nehemiah. As far as the land designation of the twelve tribes of Israel, Ein Kerem is located in what was the territory of the tribe of Judah. The historic mountain village also plays a large role in the story of Christianity. This was the place where the mother of Saint John the Baptist miraculously conceived her son. The town was also visited by the mother of Jesus during her pregnancy. The story goes that the two women met at the local town to share in their joy of being pregnant. Today the site is visited by Christians from around the world who come to sip the divine waters of the well. Wells have often been associated with women throughout several religions and Christianity is no exception. Some pilgrims even bring their own plastic water bottles to take the water back home.

The Town of Ein Kerem Today

Today Ein Kerem is home to a thriving artist community. The beauty of the landscape combined with the distinct history of the town has drawn in artists from around the world. The biblical rolling hills, iconic heritage sites, and regional legends and stories are commemorated in hundreds if not thousands of artistic renderings and representations. A few of these representations are the work of some of the most respected artists in history, including the legendary Marc Chagall, born Moishe Shagal. In 1962 he donated a series of stained glass windows to the Abbell Synagogue of the Hadassah Medical Centre. The windows are masterpieces of color, light, and composition, paying homage to the twelve sons of Jacob, their professions, accomplishments, and life histories. The concept of life history commemoration is a hallmark of many sites and sanctuaries in Ein Kerem.

The Church of Saint John the Baptist, belonging to the Franciscan order of Catholicism, is one such site. Constructed on the spot where the Saint was said to have been born, the entire structure dates back to potentially the Byzantine period. The most current additions to the Church go all the way back to the 11th century, and in the mid 20th century excavations revealed a slew of undiscovered artifacts. Some of these include a wine press, graves, and even rock cut chambers where several ceramic pieces dating to 70 AD were discovered.

The other Church that commemorates the life of Saint John the Baptist is the Church of the Visitation. The Church is located on the site where Mary was said to have sung her song of praise. The entire structure is decorated with scenes from the event including several frescos. The original mosaic floor of the Church is still visible as well. The Church also contains the legendary “Rock of Concealment” where Elizabeth and the infant John hid from Herod’s soldiers. The rock miraculously opened up and the new mother and child were able to find sanctuary. After a full day of visiting the historic sites around time, you will want to replenish yourself with a delicious meal at Atalya. Named after the head chef and owner of the restaurant, Atalya is open for private events with a menu crafted entirely by Atalya. Her dishes are inspired by the surrounding land and include corn cakes topped with sardines, focaccia, Israeli salad, and more.

Tiberias, Israel: An Extraordinary City for the Ages

One of the four original holy cities of Judaism, Tiberias is renowned for its archaeological sites, hot springs, burial sites, and some of the best meat skewers in the Galilee. The city and its history reflect the different periods of habitation within the region and is tied to several prominent figures in Jewish history. Pilgrims from across the world belonging to all three Abrahamic religions journey to Tiberias to get closer to the physical representations of their faith and the respective histories. Expect your trip to this ancient city to be filled with surprises beyond your wildest imagination.

The History of Tiberias

Tiberias’ story begins in 18 AD with the Roman vassal and Tetrarch Herod Antipas, who constructed the city in honor of Emperor Tiberius. Throughout its illustrious and somewhat tumultuous history Tiberias has always hosted a Jewish population. In the days of Herod Antipas, Jews were in the majority with the community growing in numbers after the destruction of the Temple. Jews that remained in Judea fled from Jerusalem to the northern Galilee, making Tiberias the new Jerusalem. Throughout several millennia of conquests the city retained its Jewish community and even managed to turn out some of the most influential texts in Jewish liturgy. These include the editing of the Gemara and the compilation of the Mishnah in 200 AD. The city was overtaken in the Islamic conquest of 636 and since then has hosted a substantial Arab population.

Next came the Crusader period which was in turn ended by the Ottoman conquest of the city in 1187 with the Battle of Hattin. Remnants of all these historic periods can be seen within archaeological sites that even managed to survive a substantial earthquake in 1837. Even with the establishment of British Mandate Palestine in 1922 the city still had a strong Jewish population. When the State of Israel reached independence in 1948, Tiberias was once again a Jewish majority. Today, the city is remarkably similar to various renditions of its past, with archaeological remains scattered throughout the modern architecture. Tiberias is a testament to the art of memory and cultural preservation that has been perfected in Israel – the old married to the new.

Archeological Sites in Tiberias

There are several archaeology sites that you can visit and tour located near the city of Tiberias. Just a short twenty-minute drive around the Kinneret is the biblical village of Capernaum. Established in the Hellenistic period of Judean history in the 2nd century, it was the location for several of Jesus’ miracles in the New Testament including the synagogue he was rumored to attend. Today the synagogue is one of the more prominent sites to visit featuring a whole complex including a courtyard and adorned with Judean iconography. Bet Yerah about ten kilometers south of Tiberias is home to remains from a jumble of historic eras.

The most recognizable of which are a series of mosaic floors and a Roman fort dating to the 4th and 5th century. Bet Yerah also receives an anonymous mention in the Talmud as one of two cities in the Golan surrounded by high walls. The final archaeological site is Berko National Park. This park contains remains from the ancient site of Tiberias itself, a jewel and prime example of Herod Antipas affinity for opulent architecture. The city even includes an amphitheater which in its heyday could seat a crowd of 7000. Even in the modern era of Tiberias, there is a touch of the archaic.

Must-See Sights

The Tiberias hot springs, also known as the Hamat Tiberias National Park, are a series of hot springs all fed through channels that run underneath the city. The hot springs also encompass the remnants of an 18th century Turkish Hamam spa. One of the most breathtaking 3rd century mosaics which belonged to the local synagogue is preserved in the hot springs. The entire area is one deep dive in the relaxation practices of the ancient world. Tiberias is one of the main touchstones of Jewish cultural and religious innovation. It’s no wonder that some of Judaims’ most revered sages either lived or were buried in Tiberias. This includes the tomb of Rabbi Akiva of the 1st century Tannaim who was one of the original redactors of the Mishnah. Also the tomb of Rebbe Meir, another first century Tannaim, and even the tomb of the revered author of the Guide for the Perplexed, Maimonides. Maimonides spent most of his time working and living in Alexandria and Fustat. However, legend holds that he was later reinterred in Tiberias.

Tiberias is one of the most well-preserved cities in Israel that captures the deep and distinct beauty of the region. It Was Here That He Graduated With A Certificate In Hotel Science.

Starting His Career In 1992 With Le Meridien Chain And Later The Blue Beach Resort In Syria, Chef Salah Gained Invaluable Culinary Experience Exploring The Diverse Flavours Of Mediterranean Cuisine. In 1995 Chef Salah Joined The Starwood Hotel Group, Starting At The Sheraton In Sana’A, Yemen, Where He Quickly Rose Through The Ranks To Become Oriental Chef De Cuisine.

Chef Salah Moved To The Uae In 1999, Joining The Sheraton Deira, Where He Headed Up Dubai’S Arm Of Al Fardous Lebanese Dining Restaurant.

In 2002 Chef Salah, Joined Le Royal MéRidien Beach Resort + Spa Where He Currently Resides As Chef De Cuisine Of Al Khaima, The Picturesque Arabic Restaurant Nestled In The Gardens Of The Hotel. Within This Position, Salah Is Also In Charge Of All Arab Dishes For Brasserie And Banqueting, And Has Become A Regular Guest On Ajman Tv’S Weekly Cooking Show Maedati.

Armani Hotel Kosher Restaurant: Kaf

The first kosher certified dining destination in the United Arab Emirates. The 40-seat pop-up dinner venue is located on the ground floor of the award-winning luxury hotel, adjacent to Armani/Hashi, and will deliver a standalone culinary experience that celebrates the very best in kosher cuisine, as well as paying homage to classic flavours from around the world.

The iconic venue is one of the very few, perhaps the only, located in a 5-star hotel that offers guests kosher In-Room Dining service outside of Israel. Armani/Kaf will be closed for dine-in guests on Fridays and Saturdays but will offer a special take-away menu for Shabbat, the Jewish Sabbath, for guests to enjoy in the comfort of their private space. Ellis Kosher Kitchen

Perhaps unsurprisingly, people do not normally associate traditional Jewish home cooking within the textured multicultural fabric of the UAE- let alone it’s much stricter Kosher protocols! When Elli moved into the community with her husband and three children back in 2013, this cultural gap combined with the lack of readily available Kosher products in the UAE served to strengthen Elli’s sense of purpose.

Elli was born and proudly raised in South Africa by Greek parents. She is a Sociologist and self-professed foodie with a deep respect for ancient history and culture which naturally led her to live in multiple cities around the world including Argentina. Her appreciation for traditional Jewish and Kosher food has made it difficult to eat in restaurants therefore she decided to invite people into her own kitchen and Elli’s Kosher Kitchen was born!

Over the years, Elli has blended her multicultural family recipes with local flavors to create unique, mouthwatering “Kosherati” dishes that are both familiar to locals and meant to be generously shared with loved ones of all ages.

What started out as a way to help travelers extend their time in Dubai for business or to explore its wonderful cityscape and world-class marvels has led to a growing demand for fresh Kosher meals as well as Jewish cuisine in general for the local population of Emiratis and expats.

To make sure her meals meet strict Kosher food prep protocols, she maintains two separate kitchens (1 for meat and 1 for dairy) and welcomes regular inspections from international rabbis.
