L’As du Fallafel

L’As du Fallafel is a lively kosher Middle Eastern restaurant located in the Pletzl Jewish quarter in the Le Marais neighborhood. The restaurant is known for its falafel sandwich served with eggplant and hummus, but you can create your sandwich any way you want with a variety of toppings.  There is often a line packed with both locals and tourists, some who are coming for their first time and others who have been coming for years. 1000 & 1 Signes

There aren’t many true Moroccan restaurants in Paris, and 1000 & 1 Signes is one you do not want to miss. This restaurant has received rave reviews on TripAdvisor for its delicious and authentic flavors as well as its accommodations for dietary restrictions. Many of the ingredients and produce come from the local farmer’s market and you will find a range of menu items such as Lamb Tajine, Merguez, Vegetarian Couscous, and Vegetable Tajine.

The most unique aspect of this restaurant that sets it apart from most restaurants around the world is the way the customers communicate with the staff members.  All of the staff, including the chefs, are deaf, and they greet you upon entering the restaurant with a sign language welcome. In the restaurant, you will find a small brochure with basic signs – this is given along with the menu. They also use whiteboards to facilitate communication between the waiters and customers. Whether you are deaf or hearing-able, you will have an incredible experience at 1000 & 1 Signes while enjoying the amazing flavors of traditional Moroccan cuisine.

Esther Almena

Esther is a licensed Madrid tour guide who has a strong passion for the city she was born in. She became a tour guide just a few years ago because she decided it was important to show visitors the natural way of Madrid and not just the top attractions and highlights. Esther’s goal is to make tourists feel like locals for the day and take them to some of the places less traveled. Don’t worry, you can still get insight into the city’s famous attractions, but Esther adds a personal touch that you won’t get traveling in a large group or on your own.

Esther attended a historically significant high school in Spain, which was founded in 1346. It was here when her passion for Madrid began as she began to discover the art and history around the school. While she tried living in other cities, she was always pulled back to Madrid. There is something about the Debod Temple sunsets, enjoying tapas with friends, local summer festivals, hiking the beautiful mountains, rooftop cocktails, and chocolate con churros that she couldn’t find anywhere else. On a tour with Esther, you will explore the city like a local and get to experience what it’s like to live in this incredible city.

Ramon

Ramón was born in Buenos Aires, Argentina, but because his family is Spanish they decided to move to Madrid ten years ago. As a child, Ramon had a passion for art and he enjoyed painting and drawing, which led him to his degree in Fine Arts. He enjoys roaming around the city with a sketchbook, drawing out the city’s top stops and getting to know the city. While exploring the city through art, Ramon became interested in Madrid’s history and discovered that he was constantly surrounded by history everywhere he went.  Ramon is definitely a people-person and he enjoys sharing his knowledge about the city with the visitors who want to learn about it.

The Pressbook celebrates the one year anniversary of the Jewish Silk Road Portal launch, an amazing example of using Jewish travel as a means of cultural diplomacy, whilst highlighting the significant Jewish contribution to the ancient trade route. Kudos to our participating partners from the Kiriaty Foundation (Turkey), National Board of Tourism of #Georgia, National Board of Tourism of #Uzbekistan, and Israeli Embassy of #India.
